Rapidly harvested in the coolest hours of the night to avoid maceration and oxidation, the juice is obtained after direct pressing. Careful treatment of the lees and fermentation in temperature-controlled stainless steel tanks then reveal the full potential of the grapes.
After a short ageing period on fine lees, the wines are racked for blending. It’s at this stage that our winemaker fine-tunes the wine’s personality and determines how best to express our terroir.
To keep sulfite levels as low as possible, we deliberately keep more gas in the wine. As a result, the first glass may appear slightly pearly. This sensation quickly fades, and after a little aeration, the wine’s full aromatic potential is revealed.
A very light yellow color with silver-green highlights.
