With this Sans Sulfite Ajouté cuvée, we’ve taken our pursuit of naturality and authenticity even further, vinifying without any added sulfites to express the pure essence of the grape.

A conscious and committed choice that demands constant attention, resulting in a living wine, free to evolve naturally.

Terroir and Vinification

Carignan – Hangar plot (planted in 1962, the oldest vines on the estate) on clay-loam soils.
Syrah – Gilbert plot (planted in 2003) on clay soils.

Vinifying without added sulfites requires meticulous care at every stage. The grapes are picked slightly underripe to preserve natural acidity and harvested by hand to limit oxidation before pressing.

After destemming and gentle crushing, the berries are placed in concrete vats for about three weeks of maceration. Extraction remains gentle to preserve the fruit and ensure a generous, approachable profile from the first months.

The wine is then aged on fine lees for several months before being delicately filtered and bottled.

Tasting Notes

Bright, intense colour with ruby and violet highlights.
Expressive nose of black fruits (blackcurrant, blackberry) with fresh notes of thyme and garrigue.
Smooth and delicate palate with ripe red fruits, fine and elegant tannins. Long aromatic finish, all in finesse.

Serving: slightly chilled.
