We wanted to produce a complete range of products without adding sulphites during the various stages of winemaking and ageing. A risk-taking, a standpoint… Especially a attention of every moment that allows us to propose you a wine elaborated and packaged without input or preservative. Discover atypical wines, very open, free of their own natural evolution!
In very light under maturity to favour the fruit and preserve a naturally protective acidity, the grapes are picked by hand to avoid the release of juice and their oxidation. The grapes are put in concrete vats after scratching and a slight crushing in order to keep the berries as whole as possible, but sufficiently open for a release of juice necessary for a quick start of the alcoholic fermentations. The maceration takes place over three weeks with a gentle extraction, our objective here being to promote the fruit and a wine quickly consumable. The wine is then decomposed, for aging on fine lees for a few months during which malolactic fermentation takes place. The wine is then filtered and packaged and ready to follow its natural evolution.
A brilliant colour, intense ruby and purple. First nose that opens on black fruits with notes of blackcurrant, blackberries and fresh thyme and garrigue. A sweet and delicate mouth on red fruits just walls. Light tannins, elegant and little present, a nice aromatic length and a finish on finesse.
Carignan – Hangar plot planted in 1962 (the oldest of the vineyard) on clay-loam soils.
Syrah – Gilbert plot planted in 2003 on clay soils.
A wine to be served slightly fresh & to be consumed within two years.
